Grilled Eggplant with Creamy Mayonnaise Sauce

  • 2 large eggplants
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • Salt and pepper to taste


  1. Preheat the grill to medium-high heat.
  2. Slice the eggplants into 1/2 inch rounds.
  3. In a bowl, mix together the mayonnaise, olive oil, salt, and pepper.
  4. Brush both sides of the eggplant slices with the mayonnaise mixture.
  5. Grill the eggplant slices for 3-4 minutes on each side, or until they are tender and have grill marks.
  6. Remove the grilled eggplant from the grill and let them cool for a few minutes.
  7. Serve the grilled eggplant with an extra dollop of the creamy mayonnaise sauce on top.
