This delicious recipe features tender grilled chicken infused with the vibrant flavors of lemon and herbs. It's a perfect dish for a gathering of 4 people, and it's sure to impress with its zesty and aromatic taste.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons
  • 3 cloves of garlic, minced
  • 2 tablespoons of fresh rosemary, chopped
  • 2 tablespoons of fresh thyme, chopped
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the juice of 1 lemon, minced garlic, chopped rosemary, chopped thyme, and olive oil. Mix well to create the marinade.
  2. Place the chicken breasts in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 30 minutes, or ideally overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and season with salt and pepper.
  5. Grill the chicken for 6-7 minutes on each side, or until cooked through and nicely charred.
  6. While grilling, slice the remaining lemon into wedges and grill them for a few minutes until they have grill marks.
  7. Serve the grilled chicken with the grilled lemon wedges on the side.
