Grilled Lemon Herb Chicken

This delicious recipe features tender grilled chicken infused with the vibrant flavors of lemon and herbs. It's a perfect dish for a gathering of 4 people, and it's sure to impress with its zesty and aromatic taste.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 lemons
- 3 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine the juice of 1 lemon, minced garlic, chopped rosemary, chopped thyme, and olive oil. Mix well to create the marinade.
- Place the chicken breasts in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 30 minutes, or ideally overnight.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and season with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, or until cooked through and nicely charred.
- While grilling, slice the remaining lemon into wedges and grill them for a few minutes until they have grill marks.
- Serve the grilled chicken with the grilled lemon wedges on the side.
