Grilled Mackerel Salad with Coffee Vinaigrette

Mackerel, Lettuce, coffee, skillet

Ingredients
- 4 Mackerel fillets
- 1 head of Lettuce, washed and torn into bite-sized pieces
- 1/4 cup of brewed coffee
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat a skillet over medium-high heat.
- Season the mackerel fillets with salt and pepper on both sides.
- Place the mackerel fillets in the skillet and cook for 3-4 minutes on each side until they are cooked through and have a nice char.
- While the mackerel is cooking, prepare the coffee vinaigrette by whisking together the brewed coffee, olive oil, salt, and pepper in a small bowl.
- In a large bowl, toss the torn lettuce with half of the coffee vinaigrette.
- Divide the dressed lettuce among 4 plates.
- Place a grilled mackerel fillet on top of each plate of lettuce.
- Drizzle the remaining coffee vinaigrette over the mackerel.
- Serve immediately and enjoy!
