This recipe is a delightful gluten-free option for a comforting meal. The combination of fresh mackerel and nutritious collard greens, seasoned with aromatic dried herbs, creates a delicious and wholesome dish for four people.

Ingredients

  • 4 fresh mackerel fillets
  • 1 bunch of collard greens
  • Dried herbs: oregano, thyme, basil
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the collard greens thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.
  3. Place the collard greens in a baking dish and drizzle with olive oil. Sprinkle with salt and pepper, then toss to coat evenly.
  4. Season the mackerel fillets with the dried herbs, salt, and pepper.
  5. Place the seasoned mackerel fillets on top of the collard greens in the baking dish.
  6. Drizzle a little more olive oil over the mackerel fillets.
  7. Grill in the preheated oven for 15-20 minutes, or until the mackerel is cooked through and the collard greens are tender.
  8. Serve the grilled mackerel and collard greens hot, with a squeeze of lemon juice if desired.
