This recipe combines the rich, smoky flavor of grilled mackerel with the savory-sweet goodness of soy-glazed zucchini, all cooked to perfection using the sous vide method. It’s a delightful dish that brings together fresh ingredients and comforting flavors for a memorable meal.

Ingredients

  • 4 mackerel fillets
  • 2 zucchinis, sliced
  • 1/4 cup soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the mackerel fillets with salt and pepper.
  3. Place the seasoned mackerel fillets in a sous vide bag, ensuring they are in a single layer.
  4. Cook the mackerel in the sous vide water bath at 130°F (54°C) for 30 minutes.
  5. While the mackerel is cooking, prepare the soy-glazed zucchini by heating the soy sauce in a small saucepan over medium heat.
  6. Add the zucchini slices to the saucepan and cook until they are tender and glazed with the soy sauce, about 5 minutes.
  7. Once the mackerel is done, remove it from the sous vide bag and pat dry.
  8. Grill the mackerel fillets for 2-3 minutes on each side, until they are nicely charred and cooked through.
  9. Serve the grilled mackerel with the soy-glazed zucchini on the side.
