Grilled Pork Chops with Roasted Beets and Beet Glaze

Summer dish combining the richness of pork chops with the sweetness of roasted beets and a tangy beet glaze.


  • 4 pork chops (1-1.5 inches thick)
  • 2 large beets
  • 2 tablespoons tomato paste
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)


  1. Preheat the grill to medium-high heat.
  2. In a food processor, combine tomato paste, olive oil, salt, and pepper. Process until smooth.
  3. Brush both sides of the pork chops with the tomato paste mixture.
  4. Grill the pork chops for 4-5 minutes per side, or until they reach an internal temperature of 145°F.
  5. While the pork chops are cooking, toss the beets with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven at 425°F for 30-40 minutes, or until tender.
  6. Remove the pork chops from the grill and let them rest for 5 minutes. Serve with roasted beets and a drizzle of the beet glaze.
