  • 8 fresh sardines, cleaned and gutted
  • 1 bunch of kale, stems removed and leaves torn into bite-sized pieces
  • 1 cup of green or brown lentils
  • Olive oil
  • Salt and pepper


  1. Start by cooking the lentils according to the package instructions. Once cooked, drain and set aside to cool slightly.
  2. Preheat a grill or grill pan to medium-high heat.
  3. Drizzle the sardines with olive oil and season with salt and pepper.
  4. Place the sardines on the grill and cook for 3-4 minutes on each side, or until they are cooked through and have a nice char.
  5. While the sardines are grilling, heat a frying pan over medium heat and add a drizzle of olive oil.
  6. Add the torn kale leaves to the pan and sauté for 3-4 minutes, or until wilted and slightly crispy.
  7. In a large bowl, combine the cooked lentils and sautéed kale. Drizzle with a bit of olive oil and season with salt and pepper. Toss to combine.
  8. Serve the grilled sardines on a bed of the kale and lentil salad.
