Grilled Tofu and Broccoli with Indian Spiced Vegetables

Ingredients

  • 1 block of tofu, drained and pressed
  • 2 cups of broccoli florets
  • 1 can of mixed vegetables, drained
  • Indian spice blend
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the tofu into cubes and toss them with the Indian spice blend, a drizzle of olive oil, and a pinch of salt and pepper.
  3. Place the tofu cubes on the grill and cook for 5-7 minutes on each side, until they have nice grill marks.
  4. In a bowl, toss the broccoli florets with a bit of olive oil, salt, and pepper.
  5. Grill the broccoli on the preheated grill for 4-5 minutes, until they are charred and tender.
  6. In a grill-safe pan, add the drained canned vegetables and sprinkle them with the Indian spice blend. Place the pan on the grill and cook for 5-7 minutes, stirring occasionally, until the vegetables are heated through and infused with the spices.
  7. Once everything is grilled and cooked, arrange the tofu, broccoli, and Indian spiced vegetables on a serving platter and enjoy this vibrant and flavorful dish with your family.
