Ground Beef and Rice Casserole Recipe

This flavorful and hearty casserole is perfect for feeding a crowd. Serves 4 people.

Ingredients

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F.
  2. In a large skillet, brown the ground beef over medium-high heat until no longer pink. Drain off any excess fat.
  3. Add the chopped onion and garlic to the skillet and sauté until softened, about 5 minutes.
  4. Stir in the uncooked rice, diced tomatoes, beef broth, paprika, cumin, salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and let simmer for 10 minutes.
  6. Transfer the mixture to a 9x13 inch baking dish.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes or until the rice is fully cooked and the top of the casserole is browned.
  9. Serve hot, garnished with chopped fresh parsley. Enjoy!
