Ground Beef and Rice Casserole Recipe

Ground beef, rice
This flavorful and hearty casserole is perfect for feeding a crowd. Serves 4 people.
Ingredients
- 1 pound ground beef
- 1 cup uncooked white rice
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F.
- In a large skillet, brown the ground beef over medium-high heat until no longer pink. Drain off any excess fat.
- Add the chopped onion and garlic to the skillet and sauté until softened, about 5 minutes.
- Stir in the uncooked rice, diced tomatoes, beef broth, paprika, cumin, salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low and let simmer for 10 minutes.
- Transfer the mixture to a 9x13 inch baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes or until the rice is fully cooked and the top of the casserole is browned.
- Serve hot, garnished with chopped fresh parsley. Enjoy!
