Ham and Cheese Quesadillas Recipe

  • 8 flour tortillas
  • 2 cups of shredded cheddar cheese
  • 1 cup of cooked, diced ham
  • 1/2 cup of chopped onion
  • 1/2 cup of chopped green pepper
  • 1 tablespoon of olive oil


  1. Preheat a griddle or skillet over medium heat.
  2. Heat olive oil in a pan over medium-high heat. Add chopped onion and green pepper, and cook until soft and fragrant, about 3-4 minutes.
  3. Add diced ham to the pan with onion and green pepper; stir until heated through, about 2-3 minutes.
  4. Place a flour tortilla on the heated griddle and sprinkle ¼ cup of shredded cheese over the tortilla.
  5. Spoon a small amount of the ham, onion, and green pepper mixture over the cheese.
  6. Top with another ¼ cup of shredded cheese on top of the ham mixture.
  7. Place another tortilla on top and cook until the cheese is melted and the tortillas are crispy, about 2-3 minutes.
  8. Flip the quesadilla and cook until the cheese is melted and the tortilla is crispy, about 2-3 minutes.
  9. Repeat with the remaining ingredients.
  10. Cut the quesadillas into wedges and serve with your favorite salsa and sour cream.
