Ham and Cheese Quesadillas Recipe

This quick and easy recipe is perfect for a tasty and filling lunch or weeknight meal. It is simple to make and takes only minutes to prepare.
Ingredients
- 8 flour tortillas
- 2 cups of shredded cheddar cheese
- 1 cup of cooked, diced ham
- 1/2 cup of chopped onion
- 1/2 cup of chopped green pepper
- 1 tablespoon of olive oil
Instructions
- Preheat a griddle or skillet over medium heat.
- Heat olive oil in a pan over medium-high heat. Add chopped onion and green pepper, and cook until soft and fragrant, about 3-4 minutes.
- Add diced ham to the pan with onion and green pepper; stir until heated through, about 2-3 minutes.
- Place a flour tortilla on the heated griddle and sprinkle ¼ cup of shredded cheese over the tortilla.
- Spoon a small amount of the ham, onion, and green pepper mixture over the cheese.
- Top with another ¼ cup of shredded cheese on top of the ham mixture.
- Place another tortilla on top and cook until the cheese is melted and the tortillas are crispy, about 2-3 minutes.
- Flip the quesadilla and cook until the cheese is melted and the tortilla is crispy, about 2-3 minutes.
- Repeat with the remaining ingredients.
- Cut the quesadillas into wedges and serve with your favorite salsa and sour cream.
