Ham & Egg Breakfast Sandwich Recipe

Ingredients
- 8 slices of thick-cut ham
- 4 English muffins
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
- Butter, for cooking
Instructions
- Preheat your oven to 375°F.
- Lightly toast your English muffins and set aside.
- In a small bowl, whisk together the mayonnaise and Dijon mustard until well combined.
- Spread the mixture onto the top half of each English muffin.
- Lay a slice of ham on the bottom half of each muffin.
- In a skillet over medium-high heat, melt a small pat of butter. Crack an egg into the skillet, season with salt and pepper, and cook until the white is set but the yolk is still runny.
- Place the cooked egg on top of the ham slice on each muffin.
- Sprinkle shredded cheddar cheese over the egg.
- Bake the sandwiches in the oven until the cheese is melted and bubbly, about 5 minutes.
