Ingredients
- 2 cups cooked ham, diced
- 4 medium potatoes, peeled and diced

- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 4 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon smoked paprika

Instructions
- Dice the cooked ham into small cubes.
- Peel and dice the potatoes.
- Finely chop the onion.
- Dice the red and green bell peppers.
- Mince the garlic.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the diced potatoes and cook, stirring occasionally, until they start to soften and turn golden brown, about 10-12 minutes.
- Add the chopped onion, red bell pepper, green bell pepper, and minced garlic to the skillet with the potatoes.

- Push the vegetables to the side of the skillet and add the remaining 2 tablespoons of olive oil.
- Add the diced ham and cook until it starts to brown, about 5 minutes.
- Mix the ham and vegetables together in the skillet.
- Season with salt, pepper, and smoked paprika.
- Cook for an additional 5 minutes, stirring occasionally, until everything is well combined and heated through.
- In a separate skillet, fry the eggs to your desired doneness.
- Serve the ham hash topped with a fried egg for a complete meal.
- Sprinkle the chopped fresh parsley over the ham hash.
