Healthy Asian Chicken Stir-Fry

This Healthy Asian Chicken Stir-Fry is a delicious and nutritious meal that can be prepared quickly and easily. It features fresh ingredients and is packed with flavor. Perfect for a family dinner!
Ingredients
- 4 chicken breasts, skinless and boneless
- 2 cups cooked rice
- 200g noodles of your choice
- 4 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 1 carrot, julienned
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Start by cooking the rice according to the package instructions. Set aside.
- Cook the noodles according to the package instructions. Drain and set aside.
- Slice the chicken breasts into thin strips and season with salt and pepper.
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger to the skillet and cook for 1 minute, until fragrant.
- Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, snap peas, broccoli florets, and julienned carrot. Cook for 3-4 minutes, until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet and add the cooked rice and noodles. Pour the soy sauce over the ingredients and stir well to combine.
- Cook for an additional 2-3 minutes, until everything is heated through.
- Serve the Healthy Asian Chicken Stir-Fry hot, garnished with fresh cilantro.
