This Healthy Asian Chicken Stir-Fry is a delicious and nutritious meal that can be prepared quickly and easily. It features fresh ingredients and is packed with flavor. Perfect for a family dinner!

Ingredients

  • 4 chicken breasts, skinless and boneless
  • 2 cups cooked rice
  • 200g noodles of your choice
  • 4 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Start by cooking the rice according to the package instructions. Set aside.
  2. Cook the noodles according to the package instructions. Drain and set aside.
  3. Slice the chicken breasts into thin strips and season with salt and pepper.
  4. Heat the olive oil in a large skillet or wok over medium-high heat.
  5. Add the minced garlic and grated ginger to the skillet and cook for 1 minute, until fragrant.
  6. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  7. In the same skillet, add the sliced bell peppers, snap peas, broccoli florets, and julienned carrot. Cook for 3-4 minutes, until the vegetables are crisp-tender.
  8. Return the cooked chicken to the skillet and add the cooked rice and noodles. Pour the soy sauce over the ingredients and stir well to combine.
  9. Cook for an additional 2-3 minutes, until everything is heated through.
  10. Serve the Healthy Asian Chicken Stir-Fry hot, garnished with fresh cilantro.
