Ingredients
- 4 chicken breasts
- 2 medium zucchinis, sliced
- 1 cup of lentils (preferably green or brown)
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 cups chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Wash and slice the zucchinis.
- Rinse the lentils thoroughly under cold water.
- Chop the onion and mince the garlic.
- Rub the chicken breasts with olive oil, cumin, paprika, salt, and pepper.
- Let them marinate for about 10 minutes.
- Heat the pressure cooker on the sauté setting.
- Add a bit of olive oil, then sauté the chopped onion and minced garlic until they're soft and fragrant, about 3-4 minutes.
- Add the seasoned chicken breasts to the pressure cooker.

- Pour in the rinsed lentils and sliced zucchinis.
