Healthy Ground Turkey and Cucumber Soup

Ingredients
- 500 grams of ground turkey
- 1 large cucumber, peeled and diced
- 1 liter of chicken or vegetable broth
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté until they are soft and translucent, about 5 minutes.
- Add the ground turkey to the pot and cook until browned, breaking it up with a spoon as it cooks.
- Once the turkey is browned, pour in the broth and bring the mixture to a boil.
- Reduce the heat to a simmer and add the diced cucumber.
- Let the soup simmer for about 15-20 minutes, until the cucumber is tender and the flavors have melded together.
- Using a blender, carefully puree the soup until smooth. You may need to do this in batches to avoid overfilling the blender.
- Return the pureed soup to the pot and season with salt and pepper to taste.
