Healthy Lentil and Celery Salad with Greek Yogurt Dressing

This delicious and nutritious salad is perfect for a family meal. Packed with protein-rich lentils, fresh celery, and a creamy Greek yogurt dressing, it's a healthy choice that everyone will enjoy. Let's get cooking!
Ingredients
- 1 cup dried lentils
- 4 stalks of celery, finely chopped
- 1 cup Greek yogurt
- 1 lemon (juice and zest)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the lentils under cold water and place them in a pot with 3 cups of water. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes or until tender. Drain and let cool.
- While the lentils are cooking, chop the celery into small, bite-sized pieces.
- In a medium bowl, mix the Greek yogurt, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper. Stir until well combined.
- Once the lentils have cooled, combine them with the chopped celery in a large salad bowl.
- Pour the Greek yogurt dressing over the lentil and celery mixture. Toss gently to coat all the ingredients evenly.
- Transfer the salad to a serving dish and garnish with fresh parsley if desired.
