Ingredients

  • 1 lb turkey breast, thinly sliced
  • 2 cups pumpkin, cubed
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons mayonnaise
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Prep the Ingredients: Start by preparing all your ingredients. Thinly slice the turkey breast and onion, cube the pumpkin, mince the garlic, and slice the red bell pepper.
  2. Heat the Wok: Place the wok over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the sliced turkey breast. Stir-fry until the turkey is cooked through and golden brown. Remove from the wok and set aside.
  3. Cook the Vegetables: Add the remaining tablespoon of olive oil to the wok. Toss in the sliced onion and minced garlic, cooking until fragrant and slightly softened.
  4. Add the Pumpkin: Add the cubed pumpkin to the wok and stir-fry for about 5-7 minutes, until it starts to soften. If needed, add a splash of water to help it cook through.
  5. Combine Ingredients: Return the cooked turkey to the wok and add the red bell pepper and snap peas. Stir in the soy sauce and rice vinegar. Cook for another 3-4 minutes, allowing all the flavors to meld together.
  6. Finish with Mayonnaise: Reduce the heat to low and stir in the mayonnaise. Mix well to coat all the ingredients evenly. Season with salt and pepper to taste.
  7. Serve and Garnish: Transfer the stir-fry to a serving dish and garnish with fresh cilantro. Serve immediately with a side of your favorite grain, like rice or quinoa.
