  • 4 Turkey Breasts
  • 4 heads of Bok Choy
  • 2 cups of Lentils
  • Olive oil
  • Salt and pepper
  • Your favorite herbs and spices for seasoning
  • 1 lemon (optional)

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the lentils and cook them according to the package instructions. Set aside.
  3. Season the turkey breasts with salt, pepper, and your favorite herbs and spices.
  4. Heat a little olive oil in a pan over medium-high heat. Sear the turkey breasts until golden brown on both sides.
  5. Place the seared turkey breasts in a baking dish and transfer to the preheated oven. Bake for 20-25 minutes or until the turkey is cooked through.
  6. While the turkey is cooking, cut the bok choy in half lengthwise. Drizzle with olive oil, salt, and pepper.
  7. After the turkey has been cooking for 15 minutes, place the bok choy on a baking sheet and roast in the oven for 10-15 minutes, or until tender and slightly charred.
  8. Once everything is cooked, serve the turkey breasts with the roasted bok choy and lentils. Squeeze a little lemon juice over the bok choy if desired.
