Healthy Turkey Breast with Bok Choy and Lentils

Ingredients
- 4 Turkey Breasts
- 4 heads of Bok Choy
- 2 cups of Lentils
- Olive oil
- Salt and pepper
- Your favorite herbs and spices for seasoning
- 1 lemon (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the lentils and cook them according to the package instructions. Set aside.
- Season the turkey breasts with salt, pepper, and your favorite herbs and spices.
- Heat a little olive oil in a pan over medium-high heat. Sear the turkey breasts until golden brown on both sides.
- Place the seared turkey breasts in a baking dish and transfer to the preheated oven. Bake for 20-25 minutes or until the turkey is cooked through.
- While the turkey is cooking, cut the bok choy in half lengthwise. Drizzle with olive oil, salt, and pepper.
- After the turkey has been cooking for 15 minutes, place the bok choy on a baking sheet and roast in the oven for 10-15 minutes, or until tender and slightly charred.
- Once everything is cooked, serve the turkey breasts with the roasted bok choy and lentils. Squeeze a little lemon juice over the bok choy if desired.
