Hearty Beef and Asparagus Pasta Bake

Ingredients
- 1 lb (450g) ground beef
- 1 large onion, chopped
- 2 medium potatoes, diced
- 1 bunch (about 1 lb) asparagus, trimmed and cut into 2-inch pieces
- 4 cloves garlic, minced
- 8 oz (225g) pasta (penne or fusilli work well)
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet, season with salt and pepper, and cook until browned, breaking it up with a spoon, about 7-10 minutes.

- Add the asparagus to the skillet and cook for an additional 3-4 minutes until just tender.
- Combine the cooked pasta with the beef and vegetable mixture in a large baking dish. Stir well to combine.
- Sprinkle the shredded cheese evenly over the top of the pasta bake.
- Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
