Hearty Italian Beef and Radish Stew

Ingredients
- 1.5 lbs stew beef, cut into chunks
- 1 bunch radishes, trimmed and halved
- 4 cups chicken or vegetable broth (or stock)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Set the Instant Pot to the sauté mode and add the olive oil.
- Once the oil is hot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the stew beef chunks to the pot, seasoning with salt and pepper.
- Cook until the beef is browned on all sides, about 5-7 minutes.
- Sprinkle in the dried thyme and rosemary, stirring to coat the beef.
- Pour in the chicken or vegetable broth, making sure it covers the beef.
- Add the halved radishes to the pot, stirring gently to combine.
- Secure the lid on the Instant Pot and set it to high pressure for 35 minutes.
- Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Open the lid carefully and give the stew a good stir.
- Taste and adjust seasoning if necessary.
- Ladle the stew into bowls and garnish with freshly chopped parsley.
