Hearty Kale and Potato Rice Bowl

Ingredients
- 2 medium potatoes, diced
- 2 cups kale, chopped
- 1 cup rice (any variety)
- 1/2 cup maize flour
- 1/2 cup wheat flour
- 4 cups vegetable broth or water
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- In a medium pot, bring 2 cups of vegetable broth or water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

- In the skillet with potatoes and kale, add the cooked rice and flour pieces. Drizzle with the remaining olive oil and mix everything together. Adjust seasoning with salt, pepper, and any additional spices you prefer.
