Hearty Kielbasa and Vegetable Stew

- 4 large carrots, diced
- 4 medium potatoes, peeled and cubed

- 1 pound kielbasa sausage, sliced
- 4 cups vegetable or chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste

Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes. Remove the sausage and set aside.
