Hearty Lentil Soup with Leeks and Garlic

Ingredients
- 1 cup lentils (green or brown)
- 2 large leeks, cleaned and sliced
- 4 cloves garlic, minced
- 1 large yellow onion, diced
- 6 cups vegetable broth (or water)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Rinse the lentils under cold water and set them aside. Clean the leeks thoroughly to remove any grit, then slice them. Dice the yellow onion and mince the garlic.
- In a large pot, heat the olive oil over medium heat. Add the diced yellow onion and sauté until it becomes translucent, about 5 minutes. Then, add the sliced leeks and minced garlic, cooking for another 3-4 minutes until fragrant.
- Stir in the rinsed lentils, dried thyme, and vegetable broth (or water). Bring the mixture to a boil.
- Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 25-30 minutes, or until the lentils are tender.
