Hearty Spinach and Tomato Rice

What Started it all:
Garlic, Spinach, canned tomatoes, rice cooker


  • 4 cloves of garlic
  • 4 cups of fresh spinach
  • 1 can of diced tomatoes
  • 2 cups of rice
  • Water


  1. Start by mincing the garlic cloves.
  2. In a rice cooker, combine the rice, minced garlic, and canned tomatoes.
  3. Add water to the rice cooker according to the rice package instructions.
  4. Turn on the rice cooker and let it cook until the rice is tender.
  5. While the rice is cooking, rinse the fresh spinach thoroughly.
  6. Once the rice is cooked, gently fold in the fresh spinach until it wilts.
  7. Season with salt and pepper to taste.
  8. Serve the hearty spinach and tomato rice hot.
