Hemp Seed Sweet Potato Cakes

Hemp Seeds, Sweet potato, baking powder, wok
<em>(Starts by washing the sweet potatoes and then grating them carefully)</em>
Ingredients
- 1 cup of hemp seeds
- 2 medium sweet potatoes, grated
- 1 teaspoon of baking powder
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated sweet potatoes, hemp seeds, and baking powder.
- Season the mixture with salt and pepper, and mix well until everything is evenly distributed.
- Heat the olive oil in a wok over medium heat.
- Form the sweet potato mixture into small patties and carefully place them into the wok.
- Cook the patties for about 3-4 minutes on each side, until they are golden brown and crispy.
- Once cooked, remove the sweet potato cakes from the wok and place them on a plate lined with a paper towel to absorb any excess oil.
- Serve the hemp seed sweet potato cakes hot, with a side of your favorite dipping sauce or a fresh salad.
