Homemade Superfood Protein Granola

Ingredients
- 3 cups whole grain rolled oats
- 1 cup whole grain wheat flakes
- 1 cup whole grain barley flakes
- 1 cup puffed quinoa
- 1/2 cup sugar
- 1/4 cup oligo-fructose
- 1/4 cup sunflower oil
- 1/2 cup honey
- 1/2 cup pumpkin seeds
- 1/2 cup freeze-dried pomegranate kernels
- 1/2 cup freeze-dried blueberries
- 1/4 cup grated desiccated coconut
- 1/2 teaspoon salt
- 1 tablespoon barley malt extract
- 1 teaspoon lecithin (optional)
- 1 teaspoon mixed tocopherols (antioxidant, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the whole grain rolled oats, wheat flakes, barley flakes, and puffed quinoa.
- In a separate bowl, mix together the sugar, oligo-fructose, sunflower oil, honey, salt, barley malt extract, and lecithin (if using). Stir until well combined.
- Pour the wet mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
- Spread the granola mixture evenly on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let it cool completely on the baking sheet.
- Once cooled, mix in the pumpkin seeds, freeze-dried pomegranate kernels, freeze-dried blueberries, and grated desiccated coconut.
- Store in an airtight container at room temperature for up to two weeks.
