Indian Spiced Pork Loin with Artichoke and Nut Stuffing

This Indian spiced pork loin with artichoke and nut stuffing is a flavorful and satisfying dish that’s perfect for a family dinner. The combination of tender pork, aromatic spices, and crunchy nuts will surely impress your guests! Enjoy!
Ingredients
- 4 pork loins
- 1 can of artichoke hearts, chopped
- 1/2 cup of almonds, chopped
- 1/2 cup of walnuts, chopped
- Salt and pepper to taste
- 2 tablespoons of Indian spice mix
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chopped artichoke hearts, almonds, walnuts, and Indian spice mix.
- Cut a pocket into each pork loin and stuff with the artichoke and nut mixture. Season the outside of the pork loin with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the pork loins on all sides until golden brown.
- Transfer the pork loins to a baking dish and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Let the pork loins rest for a few minutes before slicing and serving.
