Indian Spiced Salmon with Collard Greens and Rice

This Indian-inspired recipe combines the richness of salmon with the earthy flavors of collard greens and fragrant rice, all cooked together in an instant pot for a convenient and delicious meal.
Ingredients
- 4 salmon fillets
- 1 bunch of collard greens, chopped
- 2 cups of basmati rice
- 3 cups of water
- Indian spices (such as cumin, coriander, turmeric, and garam masala)
- Salt and pepper to taste
- 1 tablespoon of ghee or oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 1 cup of coconut milk
- Fresh cilantro for garnish
Instructions
- Season the salmon fillets with Indian spices, salt, and pepper.
- Turn on the instant pot to sauté mode and heat the ghee or oil.
- Sauté the diced onion, minced garlic, and grated ginger until fragrant.
- Add the chopped collard greens to the pot and cook until wilted.
- Stir in the basmati rice and water, then place the seasoned salmon fillets on top.
- Pour the coconut milk over the salmon and rice.
- Close the instant pot and set it to cook on high pressure for 5 minutes.
- Once the cooking is complete, allow the pressure to naturally release for 10 minutes before quick releasing any remaining pressure.
- Carefully open the lid and fluff the rice with a fork.
- Serve the Indian spiced salmon and collard greens over the fragrant rice, garnished with fresh cilantro.
