This Indian-inspired recipe combines the richness of salmon with the earthy flavors of collard greens and fragrant rice, all cooked together in an instant pot for a convenient and delicious meal.

Ingredients

  • 4 salmon fillets
  • 1 bunch of collard greens, chopped
  • 2 cups of basmati rice
  • 3 cups of water
  • Indian spices (such as cumin, coriander, turmeric, and garam masala)
  • Salt and pepper to taste
  • 1 tablespoon of ghee or oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 1 cup of coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Season the salmon fillets with Indian spices, salt, and pepper.
  2. Turn on the instant pot to sauté mode and heat the ghee or oil.
  3. Sauté the diced onion, minced garlic, and grated ginger until fragrant.
  4. Add the chopped collard greens to the pot and cook until wilted.
  5. Stir in the basmati rice and water, then place the seasoned salmon fillets on top.
  6. Pour the coconut milk over the salmon and rice.
  7. Close the instant pot and set it to cook on high pressure for 5 minutes.
  8. Once the cooking is complete, allow the pressure to naturally release for 10 minutes before quick releasing any remaining pressure.
  9. Carefully open the lid and fluff the rice with a fork.
  10. Serve the Indian spiced salmon and collard greens over the fragrant rice, garnished with fresh cilantro.
