Instant Pot Tempeh and Kale Curry

Ingredients
- 200g tempeh, cubed
- 1 bunch of kale, chopped (about 4 cups)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 medium tomatoes, chopped
- 1 tsp black pepper, freshly ground
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 cup coconut milk
- 1 cup vegetable broth
- 2 tbsp olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Prepare the Instant Pot: Set the Instant Pot to 'Sauté' mode and add the olive oil. Allow it to heat up for a minute.
- Cook the Aromatics: Add the cumin seeds and let them sizzle for about 30 seconds until fragrant. Then add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent.
- Add the Tomatoes and Spices: Add the chopped tomatoes to the pot and cook until they start to break down, about 3-5 minutes. Stir in the turmeric powder, coriander powder, black pepper, and salt. Cook for another minute to let the spices bloom.
