Italian Chicken and Vegetable Bake

Ingredients
- 4 medium potatoes, peeled and diced
- 4 chicken breasts, cut into bite-sized pieces
- 2 large eggs
- 2 carrots, sliced
- 2 tomatoes, chopped
- 1 cup mushrooms, sliced

- 1 small cauliflower, cut into florets
- Olive oil

Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10 minutes or until tender. Drain and set aside.
