Ingredients
- 4 boneless, skinless chicken breasts
- 400g green beans, trimmed
- 600g potatoes, diced
- 4 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 200°C (400°F).
- In a bowl, toss the diced potatoes with 2 tablespoons of olive oil, salt, pepper, and half of the minced garlic. Spread them evenly on a baking sheet.
- Place the baking sheet in the oven and roast the potatoes for about 20 minutes, or until they start to become golden brown.
- While the potatoes are roasting, season the chicken breasts with the remaining olive oil, oregano, basil, salt, and pepper.
- After the potatoes have roasted for 20 minutes, push them to one side of the baking sheet and place the seasoned chicken breasts on the other side. Return the baking sheet to the oven and roast for an additional 20 minutes.
- After the chicken and potatoes have cooked for 20 minutes, add the trimmed green beans to the baking sheet. Drizzle with a little olive oil and the remaining minced garlic, then toss to combine.
- Return the baking sheet to the oven and roast everything together for another 10-15 minutes, or until the chicken is cooked through and the green beans are tender-crisp.
- Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired, and serve warm.
