Instructions
- Season the beef chunks with salt and pepper.
- Place the beef in a sous vide bag with a drizzle of olive oil and a sprig of fresh thyme.
- Cook in a sous vide water bath at 56°C (132.8°F) for 24 hours.
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and chopped onion, sauté until fragrant and translucent.
- Stir in the carrots and celery, cooking until they start to soften.
- Pour in the diced tomatoes and beef broth, bringing the mixture to a simmer.
- Add the red wine if using, and stir in the oregano and basil.
- Remove the beef from the sous vide bag and add it to the pot along with any juices.
- Add the oats and asparagus pieces to the stew.
- Simmer the stew on low heat for about 30 minutes, or until the vegetables are tender and the flavors meld together. Add more broth if necessary.
- Taste the stew and adjust the seasoning with additional salt and pepper as needed.
- Ladle the stew into bowls and garnish with chopped fresh parsley.
