Italian Pasta with Salami and Tomato Sauce

This recipe serves 4 people.

Ingredients

  • 1 pound of pasta
  • 1/2 pound of salami, sliced thinly
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 3 cloves of garlic, minced
  • Salt and Pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Heat a large pot of salted water over high heat and bring to a boil. Add the pasta and cook until al dente, following the package instructions. Drain the pasta and reserve about a cup of the pasta water.
  2. In a large pan, heat the olive oil over medium heat. Add the salami and sautee for 2-3 minutes, or until they start to brown. Remove from the pan and set aside.
  3. In the same pan, add the onions and garlic and sautee until the onions are translucent, about 3-4 minutes.
  4. Add the chopped tomatoes to the pan and let it cook for another 3 minutes. Season with salt and pepper to taste.
  5. Add the salami back to the pan and give it a good mix.
  6. Add the cooked pasta to the tomato and salami sauce and mix well. If the pasta is too dry, add a little bit of the pasta water you reserved earlier to loosen it up.
  7. Serve the pasta in bowls and garnish with grated Parmesan cheese.
