Italian Salami and Tomato Pasta Recipe for 2 People

This Italian-inspired pasta dish is quick and easy to make, perfect for a weeknight dinner. Salami and tomatoes sautéed with onions and garlic make a flavourful sauce that pairs beautifully with your favourite pasta.

Ingredients

  • 200g spaghetti
  • 150g salami, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 3 medium-sized tomatoes, chopped
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the spaghetti according to the package directions until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until the onion is translucent, about 3-4 minutes.
  3. Add the salami to the skillet and cook for another 2-3 minutes, stirring occasionally.
  4. Add the chopped tomatoes to the skillet and continue cooking for another 2-3 minutes, until the tomatoes are slightly softened.
  5. Season the sauce with salt and black pepper to taste and stir to combine.
  6. Add the cooked spaghetti to the skillet and toss to coat with the sauce.
  7. Divide the pasta between two plates and serve immediately.
