- 1 lb (450 g) Italian sausage (casings removed)

- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon crushed red pepper flakes (optional)

Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- Sauté the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

- Combine Ingredients: Return the cooked sausage to the skillet. Add the cooked pasta, oregano, and crushed red pepper flakes (if using). Toss everything together, adding some reserved pasta water a little at a time until the desired consistency is achieved. Season with salt and pepper to taste.
