Italian-Style Tofu and Bell Pepper Stir-Fry

Ingredients
- 400g firm tofu, drained and cubed
- 2 large bell peppers (any color), sliced
- 4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Drain the tofu and press it to remove excess moisture. Cut it into 1-inch cubes.
- In a mixing bowl, combine the cubed tofu with 1 tablespoon of olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Mix well and let it marinate for at least 15 minutes.
- While the tofu is marinating, slice the bell peppers into strips and mince the garlic.
- Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat. Add the marinated tofu cubes and cook until they are golden brown on all sides, about 5-7 minutes. Remove the tofu from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the sliced bell peppers to the pan and cook for about 5-7 minutes until they are tender but still crisp.
- Add the cooked tofu back to the pan and toss everything together until well combined. Cook for an additional 2 minutes to heat everything through.
- Adjust the seasoning with salt and pepper as needed.
- Garnish with fresh basil leaves if desired.
