This unique Italian-inspired dish combines the delicate flavors of tofu and turnip with the richness of canned fish, all cooked to perfection in a rice cooker.

Ingredients

  • 1 cup tofu, cubed
  • 2 medium turnips, peeled and diced
  • 1 can of tuna, drained
  • 1 can of sardines, drained and mashed
  • 2 cups Arborio rice (or any short-grain rice)
  • 4 cups vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. Prepare the Rice Cooker: Add the Arborio rice and vegetable broth to the rice cooker. Turn it on and let it start cooking.
  2. Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.
  3. Cook the Tofu and Turnip: Add the cubed tofu and diced turnip to the skillet. Cook until the turnip begins to soften and the tofu is lightly browned, about 8-10 minutes.
  4. Add the Fish: Add the drained tuna and mashed sardines to the skillet. Stir well to combine with the tofu and turnip mixture. Season with dried oregano, dried basil, salt, and pepper. Cook for another 5 minutes to let the flavors meld together.
  5. Combine with Rice: Once the rice cooker has finished cooking the rice, carefully open it and fluff the rice with a fork. Add the tofu, turnip, and fish mixture to the rice cooker. Gently fold everything together until well combined.
  6. Serve: Spoon the Italian-style tofu and turnip rice into bowls. Garnish with freshly chopped parsley and a sprinkle of grated Parmesan cheese if desired. Serve hot and enjoy!
