This Italian zucchini chia seed soup is perfect for a quick and healthy meal for four people. It’s packed with flavor and nutrients, and it’s so easy to make in a slow cooker.
Ingredients
- Chia Seeds
- Zucchini
- Vegetable oil
- Slow cooker
Instructions
- Start by washing and chopping the zucchinis into small pieces.
- Heat a small amount of vegetable oil in a pan over medium heat.
- Add the chopped zucchinis to the pan and sauté until they are slightly softened.
- Transfer the sautéed zucchinis to the slow cooker.
- Add the chia seeds to the slow cooker with the zucchinis.
- Pour in enough water or vegetable broth to cover the zucchinis and chia seeds.
- Cook the soup in the slow cooker on low for 4-6 hours, or on high for 2-3 hours, until the zucchinis are very soft.
- Once the soup is ready, use an immersion blender to blend it until smooth.
- Season with salt and pepper to taste.
