Jackfruit Curry Recipe

This delicious and flavorful jackfruit curry is perfect for any vegan or vegetarian meal! With exotic spices and tender jackfruit meat, this dish is sure to delight your taste buds. Adjust the ingredient proportions below for a perfect meal for 4 people.

Ingredients

  • 2 cans of young jackfruit, drained and rinsed
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 tsp of ginger, grated
  • 2 tbsp of curry powder
  • 1/2 tsp of turmeric powder
  • 2 tbsp of vegetable oil
  • 1 cup of coconut milk
  • 1 cup of vegetable broth
  • 1/2 tsp of salt
  • 1/4 tsp of pepper
  • Fresh cilantro, chopped, for garnish
  • Jasmine rice, for serving

Instructions

  1. Begin by heating up the oil in a large saucepan over medium-high heat.
  2. Add the chopped onion and sauté until they become translucent, around 2-3 minutes.
  3. Add in minced garlic and grated ginger, and cook for another minute.
  4. Add in the drained and rinsed jackfruit, curry powder, and turmeric powder. Stir and cook for around 2 minutes.
  5. Add in coconut milk and vegetable broth, stirring until you have a smooth mix.
  6. Season with salt and pepper to taste.
  7. Reduce the heat, cover the pan, and let everything simmer for around 15-20 minutes, or until the jackfruit is soft and tender.
  8. Once it is cooked, remove from heat and serve over jasmine rice.
  9. Garnish your dish with freshly chopped cilantro and enjoy!
