  • 4 salmon fillets (about 150g each)
  • 200g fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper to taste
  • Cooked rice, for serving


  1. Prepare the Salmon: - Season the salmon fillets with salt and pepper on both sides. - In a wok, heat 1 tablespoon of olive oil over medium-high heat. - Add the salmon fillets and cook for about 3-4 minutes on each side, or until the salmon is cooked through and has a nice golden crust. Remove the salmon from the wok and set aside.
  2. Cook the Spinach: - In the same wok, add the remaining 1 tablespoon of olive oil. - Add the minced garlic and sauté for about 30 seconds until fragrant. - Add the fresh spinach and cook, stirring frequently, until wilted, about 2-3 minutes.
  3. Combine and Season: - Return the cooked salmon to the wok, gently breaking it into large chunks with a spatula. - Add the soy sauce, mirin, and sesame oil, stirring to combine all the ingredients. - Cook for an additional 1-2 minutes to allow the flavors to meld together.
  4. Serve: - Divide the cooked rice among four plates. - Spoon the salmon and spinach mixture over the rice. - Sprinkle with sesame seeds, if using.
