This recipe for Japanese yam sushi is a delightful and healthy dish that's perfect for sharing with friends and family. The fresh and seasonal ingredients make it a nutritious and delicious option for a gathering.

Ingredients

  • 1 cup sushi rice
  • 1 1/2 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 yam (sweet potato), peeled and thinly sliced
  • 3 sheets nori (seaweed)
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

Instructions

  1. Rinse the sushi rice in a fine-mesh strainer until the water runs clear.
  2. In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. In a small bowl, mix the rice vinegar, sugar, and salt.
  4. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.
  5. Steam the sliced yam until tender, then set aside to cool.
  6. Place a sheet of nori on a bamboo sushi mat. Moisten your hands and spread a thin layer of rice over the nori, leaving a small border at the top.
  7. Arrange a few slices of yam in the center of the rice.
  8. Roll the sushi tightly using the bamboo mat, then slice into pieces.
  9. Serve the yam sushi with soy sauce, pickled ginger, wasabi, and a sprinkle of sesame seeds and green onions.
