Ingredients
- 1 whole chicken (about 4-5 pounds)
- 4 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- Salt and pepper, to taste
- 1 onion, quartered
- 1 cup chicken broth
Instructions
- Preheat your oven to 425°F (220°C).
- Remove the chicken from its packaging and pat it dry with paper towels. This helps achieve a crispy skin.
- In a bowl, combine olive oil, rosemary, thyme, parsley, minced garlic, lemon zest, lemon juice, salt, and pepper. Mix well to create a paste.
- Rub the herb mixture all over the chicken, including under the skin for maximum flavor. Make sure to also season the cavity of the chicken with salt and pepper.
- Place the quartered onion inside the cavity of the chicken for added flavor.
- Place the chicken in a roasting pan. Pour the chicken broth into the bottom of the pan to keep the chicken moist while roasting.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) when checked at the thickest part of the thigh.
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring moist and flavorful meat.
This herb-roasted chicken is a classic American dish that’s not only easy to prepare but also delivers incredible flavor. Serve it with your favorite sides, and enjoy a delightful meal with family and friends! Happy cooking!
