Keto Avocado & Greek Yogurt Delight with Sous Vide Nuts

Ingredients
- 2 ripe avocados
- 1 cup of Greek yogurt
- 1/2 cup of almonds
- 1/2 cup of walnuts
- Salt and pepper to taste
- Fresh lemon juice (optional)
Instructions
- Preheat your sous vide machine to 85°C (185°F).
- Place the almonds and walnuts in a vacuum-seal bag.
- Seal the bag and sous vide the nuts for 1 hour. Once done, let them cool and chop them roughly.
- Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork until smooth. Season with salt, pepper, and a splash of lemon juice if desired.
- Fold the Greek yogurt into the mashed avocado until well combined. Adjust seasoning if necessary.
- Gently mix in the chopped sous vide nuts, reserving a few for garnish.
- Divide the mixture into 4 servings. Garnish with the reserved nuts and a pinch of salt and pepper.
