Keto Baked Salmon with Crispy Kale

  • 4 salmon fillets
  • 1 bunch of kale, stems removed and torn into bite-sized pieces
  • 1 teaspoon baking soda
  • Salt and pepper to taste


  1. Preheat the microwave to high.
  2. Place the kale in a microwave-safe bowl and sprinkle with baking soda. Toss to coat evenly.
  3. Microwave the kale for 3-4 minutes, or until crispy, stirring halfway through. Watch carefully to prevent burning.
  4. Season the salmon fillets with salt and pepper.
  5. Place the seasoned salmon fillets on a microwave-safe dish.
  6. Microwave the salmon for 3-4 minutes, or until it reaches your desired level of doneness.
  7. Serve the salmon alongside the crispy kale.
