  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Green onions, chopped for garnish (optional)

Instructions

  1. Heat a large wok over medium-high heat. Add 1 tablespoon of coconut oil and let it melt.
  2. Add the beef tenderloin slices to the wok. Stir-fry for 3-4 minutes until browned. Remove the beef from the wok and set aside.

  6. Push the vegetables to one side of the wok and add the cauliflower rice. Stir-fry the cauliflower rice for 3-4 minutes until it is tender.
  7. Return the beef to the wok. Pour in the soy sauce and sesame oil. Mix everything together and cook for another 2 minutes until everything is well combined and heated through.
  8. Season with salt and pepper to taste. Garnish with sesame seeds and chopped green onions if desired.
