Keto Beef Tenderloin Stir-Fry

This quick and easy Keto Beef Tenderloin Stir-Fry is perfect for a weeknight dinner. Packed with flavor and low in carbs, it's a dish your whole family will love!
Ingredients
- 1 lb beef tenderloin, thinly sliced
- 2 large sweet potatoes, spiralized into noodles
- 1 cup cauliflower rice
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
- Green onions, chopped for garnish (optional)
Instructions
- Heat a large wok over medium-high heat. Add 1 tablespoon of coconut oil and let it melt.
- Add the beef tenderloin slices to the wok. Stir-fry for 3-4 minutes until browned. Remove the beef from the wok and set aside.
- In the same wok, add the remaining tablespoon of coconut oil. Add the onion, garlic, and ginger. Stir-fry for about 2 minutes until fragrant.
- Add the bell peppers to the wok. Stir-fry for another 2-3 minutes until they start to soften.
- Toss in the spiralized sweet potato noodles. Stir-fry for about 5 minutes until they are tender but still slightly crisp.
- Push the vegetables to one side of the wok and add the cauliflower rice. Stir-fry the cauliflower rice for 3-4 minutes until it is tender.
- Return the beef to the wok. Pour in the soy sauce and sesame oil. Mix everything together and cook for another 2 minutes until everything is well combined and heated through.
- Season with salt and pepper to taste. Garnish with sesame seeds and chopped green onions if desired.
