Ingredients

  • 200g seitan
  • 1 large carrot, peeled and grated
  • 100g sugar-free chocolate chips
  • Food processor

Instructions

  1. Begin by crumbling the seitan in a food processor until it reaches a fine, crumb-like texture.
  2. Add the grated carrot to the food processor and blend it with the crumbled seitan until well combined.
  3. Melt the sugar-free chocolate chips in a microwave-safe bowl or using a double boiler.
  4. Once the chocolate is melted, pour it over the seitan and carrot mixture in the food processor.
  5. Pulse the mixture until the chocolate is evenly distributed and the mixture comes together to form a dough-like consistency.
  6. Using your hands, roll the mixture into small, bite-sized truffle balls and place them on a lined baking sheet.
  7. Refrigerate the truffles for at least 30 minutes to allow them to set.
  8. Once set, remove the truffles from the refrigerator and serve them as a delightful keto-friendly treat.
