What Started it all:
Cod, Turnip, oats, rice cooker
This dish is a bloody fantastic way to enjoy a keto-friendly meal without sacrificing flavor. Cod and turnip come together in a simple yet exquisite recipe that will have you questioning why the hell you ever needed carbs in the first place. Let's get to it, shall we?
Ingredients
- 4 cod fillets
- 2 large turnips, peeled and diced
- 1/2 cup ground oats (for a bit of texture and crunch)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions
- Prep the Turnips: Get those turnips peeled and diced, for heaven's sake! Toss them in a bit of olive oil, salt, and pepper. Throw them into the rice cooker, set it to the 'Steam' setting, and let them cook until they're tender, about 15-20 minutes.
- Prepare the Cod: Rub the cod fillets with olive oil, minced garlic, paprika, salt, and pepper. Make sure you coat those fillets well. No half-arsed jobs here!
- Cook the Cod: Heat a non-stick skillet over medium-high heat. Once hot, place the cod fillets in the skillet. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Don't overcook it, for crying out loud!
- Finish the Turnips: Once the turnips are done in the rice cooker, drain any excess water. Toss them in the ground oats for a bit of crunch. Season with additional salt and pepper if needed.
- Plate and Serve: Place a generous scoop of the turnip mixture on each plate. Top with a cooked cod fillet. Garnish with fresh parsley and a lemon wedge if desired.
There you have it, a bloody brilliant keto meal that's simple, delicious, and won't make you miss carbs one bit. Now get out there and cook it, and don't mess it up!
