Keto Greek Yogurt Eggplant Dip

  • 1 large eggplant
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplant into 1/2 inch rounds and brush both sides lightly with olive oil.
  3. Place the eggplant slices on a baking sheet and roast in the oven for 20-25 minutes until tender and slightly golden.
  4. Remove the eggplant from the oven and let it cool for a few minutes.
  5. In a food processor, combine the roasted eggplant, Greek yogurt, and remaining olive oil.
  6. Blend until smooth and creamy, then season with salt and pepper to taste.
  7. Transfer the dip to a serving bowl and drizzle with a little extra olive oil if desired.
  8. Serve with your favorite keto-friendly vegetables or low-carb crackers.
