Keto Instant Pot Cottage Cheese Stuffed Mushrooms

What Started it all:
Cottage Cheese, Mushroom, garlic, instant pot


  • 8 large mushrooms
  • 1 cup cottage cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped
  • Olive oil
  • 1/4 cup water


  1. Preheat the instant pot by selecting the sauté function.
  2. Clean the mushrooms and remove the stems. Set aside.
  3. In a bowl, mix the cottage cheese with minced garlic, salt, pepper, and chopped parsley.
  4. Stuff each mushroom with the cottage cheese mixture.
  5. Add a drizzle of olive oil to the instant pot.
  6. Place the stuffed mushrooms in the instant pot.
  7. Add 1/4 cup of water to the pot.
  8. Close the instant pot and set it to high pressure for 5 minutes.
  9. Once the cooking cycle is complete, do a quick pressure release.
  10. Carefully remove the mushrooms from the instant pot and serve hot.
