A Quick and Easy Keto Recipe for 4


  • 1 pound mackerel fillets
  • 2 cups kale, stems removed and chopped
  • 1 cup whole wheat pasta
  • 1 cup cooked white rice


  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and place the mackerel fillets on it.
  3. Drizzle with olive oil, salt, and pepper to taste.
  4. Bake for 12-15 minutes or until cooked through.
  5. While the mackerel is baking, cook the pasta according to package instructions.
  6. In a separate pan, heat some olive oil and sauté the chopped kale until wilted.
  7. In a large serving dish, combine the cooked pasta, wilted kale, and baked mackerel.
  8. Serve hot and enjoy!
